- Truffles: You can use fresh jarred truffles in oil instead of the truffle salt. The jarred truffles are my preference for this recipe even though I am showing truffle salt in the picture. I use one tablespoon of truffles with a half teaspoon of salt. Then taste to adjust the salt if needed. Truffle salt goes especially well with roasted or grilled veggies like these Portobello Mushrooms.
- 🧈 Butter: This is the backbone of the sauce, so let it cook until it smells nutty and turns golden brown. I found it is best to keep the heat moderate and whisk often so the milk solids brown evenly instead of burning.
- 🧀 Cream Cheese: This gives the sauce its smooth, creamy texture. Let it soften a bit before adding so it melts more easily and blends in without little lumps.

How To Make Truffle Sauce: Step-By-Step

Step 1: In a small saucepan, heat the butter over high heat whisking often so that it doesn't burn.

Step 2: When the butter begins to darken and turn brown, remove the pan from the heat but continue to whisk.
Slowly add the cream cheese while you're whisking and keep it moving until it's melted.

Step 3: Add in the beef broth and truffle salt.

Step 4: Using a stick immersion blender, puree the sauce until it's smooth.
Either use it immediately or pour it into a mason jar to store in the fridge.
Recipe Tips
- As you brown the butter it will bubble and froth. This is what you want to bring out the best flavor. You need to continually whisk the butter so it doesn't burn on the outside of the pan. Once the butter starts to darken and turn brown, you'll want to remove it from the heat.
Gwen's Pro Tip
An immersion blender works best to smooth out the steak sauce. Though you can use a whisk to incorporate it all, it is a lot more work.
Once everything is mixed, sample the sauce and adjust the seasonings as per your palate.
