    Banana Bread with Chocolate Chips

    Who doesn't love a loaf of mouthwatering banana bread chocked full of chocolate chips? Especially when the bread is super moist and chock full of tasty chocolate chips!

    Whenever we have bananas that are turning ripe, I immediately think of making two loaves of this delicious bread. I freeze one and eat the other for breakfast during the week.

    How to make Banana Bread

    It won't take long to whip up a batch of this batter. The key is to make sure that your bananas are not only ripe but brown or verging on being brown. This will ensure that the bread is sweet and smells like bananas. 

    Peel your bananas from the bottom. Yes, that's right! It's a fun hack to get your banana peel off the fruit! If you have too many bananas, peel them and toss them in a freezer bag for the next batch.

    Two of my secret ingredients are high-quality chocolate chips and pure vanilla extract. When I can't get my favorite chocolate, which is a top-notch Belgian, my standby for this recipe is the Ghiradelli 60% dark chocolate chips. They do the trick as does Morton and Basset Pure Vanilla Extract. 

    I make this recipe in my Kitchenaid but feel free to do it with a hand mixer. Make sure you

    grease the loaf pans. My favorite is to use Bakers Joy spray. It has flour in the spray and it will allow you to easily turn out these loaves.

    That's it! Delicious banana bread. Cut a slice, warm it in the microwave for 15 seconds, or toast it and slather it with butter. It doesn't matter how you eat this......it is super yummy!

    Equipment

    • 2 Loaf Pans

    Ingredients

    • 2 ½ cups sugar
    • ½ lb butter
    • 4 eggs
    • 3 cups flour
    • 2 t baking soda
    • ½ t salt
    • 1 cups sour cream
    • 2 tablespoon vanilla extract
    • 10 oz chocolate chips
    • 2 ½ cups mashed ripe bananas

    Instructions

    • Pre-heat the oven to 350 degrees. Grease two loaf pans. Cream the butter and sugar with a mixer on medium speed. Add the eggs one at a time. Set aside. Combine the flour, salt, and baking soda. Add small amounts of  these dry ingredients to the egg mixture, alternating with the sour cream. Add the vanilla, chocolate chips, and banana. Combine. Divide the batter and place the batter into the two loaf pans evenly. Bake for 1 hour and 15 minutes or until golden and baked through. Cool on a rack.

    Notes

    These can be stored on the counter or wrapped and frozen until ready to eat.
