What Is a Blintz Souffle Or Blintz Casserole
A blintz casserole (also known as a blintz soufflé) is a baked dish inspired by classic Eastern European blintzes, which are thin crepes traditionally filled with sweet cheese or fruit.
Instead of using pre-made or frozen blintzes, this recipe takes a deconstructed approach, layering a simple batter with a creamy cottage cheese filling like the one I use for the Starbucks Egg White Bites. It captures all the flavor and comfort of the original, without the extra work.

When I serve this blintz casserole for brunch, I often round out the table with another classic baked dish like my Sweet Noodle Kugel or Savory Vegetable Kugel, both of which complement the creamy texture and gentle sweetness beautifully.
To balance the richness, I usually add a fresh, bright salad such as my Italian White Bean Salad or the Arugula Salad With Dates, which brings a light, herby contrast and makes the meal feel complete without much extra effort.

Key Ingredients
You will need the following ingredients to make this blintz souffle:
Flour: You can use any gluten-free flour blend that is a multi-purpose blend in place of regular AP flour. I have tested using King Arthur Gluten Free Multipurpose Flour and this recipe came out great.
Cottage Cheese: My favorite is always using a whole-milk cottage cheese for this recipe. I have tested it with lower-fat varieties, and it is still delicious.
See the recipe card for quantities.
Variations
- Fruit - the easiest way to vary this breakfast souffle is by adding fruit jam on top of the cheese mixture before you pour the last layer onto the souffle. Try raspberry jam, blueberry pie filling, or just sliced fresh fruit.
- Cinnamon - sprinkle cinnamon on top or in the batter of this casserole for a warm flavor.
- Lemon or Orange - if you would like to add a bit more kick, add about 2 tablespoons of lemon zest or orange zest to either the batter or the filling.
- Frozen Blintzes - if you want to serve these as a traditional blintz souffle, use frozen store-bought blintzes. These are normally cheese-filled and with them, you only need to make the topping, pour it over, and bake.
- Cheese - while this recipe calls for cottage cheese, I have also used farmer's cheese or ricotta cheese to make the sweet cheese filling.
How To Make This Blintz Souffle: Step-By-Step
Here are some quick visual instructions. Remember that full instructions with the exact ingredients are in the printable recipe card:
Step 1: In a blender, or food processor fitted with a steel blade, or using an electric mixer in a large bowl, add the butter, sugar, eggs, sour cream, orange juice, flour, and baking powder. Blend until smooth.
Step 2: In another bowl, combine the cream cheese, cottage cheese, vanilla, egg yolks, and sugar.
Step 3: Pour in half of the batter from Step 1 to create a bottom layer. Slowly drop the filling mixture from Step 2 onto the batter.
Step 4: Pour the rest of the batter over top of the mixture and bake in the oven for 50-60 minutes until puffed and golden brown.
Let cool for 5-10 minutes before serving it.
Recipe Tips
- Butter - make sure the butter you use is softened so that it blends well into the mixture.
- Baking - keep an eye on the casserole towards the end of the baking time. The top should be a beautiful golden brown color.
Gwen's Pro Tip
This can be made the day before, stored in the refrigerator, and then baked the day you need it. Or, you can store the ready-to-make casserole in the freezer for up to a week and then defrost it before baking it. If you want to bake it ahead you can bake it and then store it in either the refrigerator or the freezer.
Blintz Souffle FAQ's
You can add any fruit or fruit jam, sour cream, or cinnamon as a side to the souffle. Typically, I will also be serving other egg dishes for brunch like my Smoked Salmon Frittata, Leek Quiche, or my Challah French Toast Casserole along with other proteins to round out the brunch.
Blintzes always contain a filling, typically a sweet cheese, before they're baked or fried whereas crepes can be made without a filling. Likewise, crepes are light, thin, and often only cooked once.
Yes! Let it cool in the dish it was cooked in before covering the dish with aluminum foil or plastic wrap and placing it in the refrigerator. When you're ready, bring the dish to room temperature before baking it at 300℉ until cooked through. You can also store the souffle in individual portions to reheat quickly.
No. Most blintz souffle recipes start with a box of frozen blintzes and pour a sweet egg batter over the top. This version skips the blintzes entirely. A creamy filling of cottage cheese, cream cheese, and vanilla bakes between two layers of orange batter, so you get the sweet cheese center and golden, puffed top without buying or rolling a single blintz. You'll also see this dish called a blintz casserole; the two names are used interchangeably.
