Greek Lemon Chicken and Potatoes is a one-pan dinner with golden thighs and tender potatoes that soak up a garlic lemon-oregano sauce. This chicken is prepped in 15 minutes and is a Greek version of my Italian Lemon Chicken. I add honey and Dijon mustard to the pan sauce and roast the chicken uncovered so the sauce reduces, keeping the skin crispy.

Lemon, garlic, and oregano are the backbone of Mediterranean cooking, and once you have the combination down, it works on almost anything. The same trio seasons my Salmon, a 30-minute weeknight favorite. If you like to marinate ahead, Greek Chicken with a Yogurt Marinade is the make-ahead cousin to this recipe. On colder nights, the same bright flavors go into a bowl of lemony Greek Chicken Soup with Orzo.

This dish brings the chicken, the potatoes, and the sauce, so all it needs is something fresh and something cool on the side. A crisp Greek Salad cuts through the richness of the crispy skin, and a bowl of cool, garlicky Tzatziki for dipping is never a bad idea. For a heartier vegetable, my Greek Green Beans braised in tomato round out the table, and they're dinner party worthy.
Key Ingredients
You will need the following ingredients to make this chicken with lemon potatoes:

- Bone-In, Skin-On Chicken Thighs - Dark meat stays juicy through a long roast, the bone adds flavor, and the skin is what turns golden and crackling on top. As the thighs roast, their fat drips down and seasons the potatoes underneath, so you get more flavor from the same pan. Breasts are leaner and when tested dried out faster in the same time frame. Thighs are the forgiving choice and a traditional one in Greek home cooking.
- Baby Potatoes - Halved baby potatoes need no peeling and only one cut each. Their thin skins brown at the edges while the insides turn creamy from the sauce. Yukon Gold wedges are the typical choice in this dish, but baby potatoes cook evenly at the same size with less knife work. If you love a crispier potato on the side, my Garlic Smashed Potatoes are worth a look.
- Dijon and Honey - It's just a teaspoon of each, but they're what sets this sauce apart. Dijon helps the olive oil and lemon juice blend together and adds savory depth. Honey softens the lemon's sharp edge and helps the sauce caramelize as it reduces in the oven. The rest of the sauce leans on Mediterranean pantry staples you likely have already: olive oil, garlic, and dried oregano. Honey and Dijon are the small twist that makes this version its own.

Variations
- A feta finish - Crumble feta over the top right after it comes out of the oven, with a little extra lemon zest, for a tangier, saltier bite. Note that this adds dairy.
- Red onion and olives - Tuck red onion wedges and Kalamata olives in with the potatoes for a briny, sweet note.
- Fresh herb swap - Finish with chopped parsley or dill instead of fresh oregano for a greener, brighter garnish.
- Extra garlic - Tuck a few whole, unpeeled garlic cloves in with the potatoes. They roast soft and sweet, and they're good for spreading on bread.
How To Make Greek Lemon Chicken and Potatoes: Step-By-Step
Here are some quick visual instructions. Remember that full instructions with the exact ingredients are in the printable recipe card:

Step 1: Preheat the oven to 400°F. Lightly grease a 9x13-inch baking dish with olive oil. Toss the potatoes with olive oil, salt, and pepper. Spread them in an even layer in the dish. Pat the thighs dry with paper towels. Season with salt and pepper, then drizzle with some olive oil. Nestle the thighs skin-side up on top of the potatoes.

Step 2: In a bowl or jar, whisk together the olive oil, lemon juice, chicken broth, garlic, oregano, Dijon, honey, lemon zest, salt, and pepper until combined.

Step 3: Pour the sauce around the chicken and over the potatoes, keeping the skin as dry as you can.

Step 4: Roast uncovered for 50 to 60 minutes, until the skin is golden and crisp, the potatoes are tender and browned at the edges, and the thickest part of a thigh reads 175°F. Spoon the pan juices over everything, garnish with fresh oregano or parsley, and serve with lemon wedges.
Helpful Tips
- Pat the chicken dry - Moisture on the skin turns to steam in the oven, and steam is the enemy of crisp. Thirty seconds with a paper towel makes a real difference.
- Trust a thermometer - Thighs are safe at 165°F, but they get noticeably more tender closer to 175°F. Check the thickest thigh without touching the bone, since bone reads hotter.
- Keep the potatoes in one layer - If they're piled up, the bottom ones steam instead of browning. Spread them out before you add the chicken.
Gwen's Pro Tip
Pour the sauce around the chicken, never over it. Skin that starts out wet, or sits in the sauce, roasts soft and pale. Keep it high and dry and it comes out golden and crackling.

Greek Lemon Chicken and Potatoes FAQ's
Not for this version. Many Greek recipes cover the dish with foil first, which softens the potatoes but also softens the skin. In this recipe the chicken roasts uncovered the whole time, so the broth reduces into a concentrated sauce while the skin crisps.
The usual culprits are a crowded dish or potatoes sitting under the chicken. Spread them in a single layer, cut them to the same size, and give the dish the full roasting time. A few minutes under the broiler at the end also helps.
Yes. Use bone-in, skin-on breasts and start checking the temperature early, since they cook faster and dry out sooner than thighs. Pull them at 165°F.
