The first time I ate a Starbucks egg bite I was in heaven. Typically, I grab them with my morning coffee when we are traveling and I want a high-protein easy grab-and-go breakfast. 

The Starbucks egg bites are tasty and convenient, but I knew they most likely contained ingredients I wouldn't typically eat at home. I set out to make an egg bite in my kitchen that I could keep in the freezer and grab when I wanted a quick bite with my coffee.

Plus, the best part was that I knew that this would be a great way to make an entire batch for what the Starbucks egg bites would cost for only two of them. 

This Starbucks copycat recipe is terrific for busy mornings and offers a healthy breakfast in seconds for you or your family. While most of the time you won't have leftover egg bites, these are easily made ahead and stored until you need them. These homemade egg bites fit into a low-carb diet or a keto diet.

How To Make Healthy Starbucks Egg Bites Recipe: Step-By-Step:

Step 1: Spray a mini muffin pan with a cooking spray or coat with olive oil and preheat the oven to 350 degrees. Place all of the ingredients except the chives into a blender or Nutribullet.

Step 2: Blend the eggs, cottage cheese, cheddar cheese, salt, and pepper. 

Mixture placed into the prepared muffin tin.

Step 3: Divide the egg mixture into the prepared pan filling the cups no more than ¾ of the way to the top. Sprinkle with chives. 

Fully baked egg bites on a wire rack.

Step 4: Bake for 20 minutes or until the eggs are slightly firm to the touch. Let them sit for a few minutes before removing them from the pan.

While the one I have at home is not sturdy, it bends all over the place, I do like this one on Amazon as it will be simple to take in and out of the oven. If you already own a silicone muffin tin that isn't sturdy, you can use a wire rack or baking sheet underneath it while it is cooking in the oven.

  • 1 cup cottage cheese
  • 1 dash hot sauce
  • ¼ teaspoon salt or more to taste
  • black pepper pinch
  • fresh chives chopped for garnish on top

Instructions
 

  • Spray the cups of a mini muffin pan lightly with a cooking spray or olive oil.
  • Preheat the oven to 350℉.
  • In a blender or Nutribullet, blend together the eggs, cottage cheese, cheddar cheese, hot sauce, salt, and pepper.
  • Divide the egg mixture into 12 cups of your muffin pan filling the cup no more than ¾ of the way.
  • Top with the chopped chives.
  • Bake for 20 minutes until the eggs are slightly firm to the touch.
  • Remove from the oven and let sit for a few minutes. The egg bites will settle down in the pan.
  • Remove from the pan and enjoy or store for later.
