This Sweet Bundt Pan Noodle Kugel is my family's holiday showstopper. It is baked in a bundt pan and has a glossy, caramel-like topping. With cinnamon, applesauce, and raisins tucked into the noodles, it is a sweet dish that works well for the Jewish High Holidays or any dinner party.

If you've tried my Cheesy Noodle Kugel, Carrot Kugel, or Vegetable Kugel, you'll know kugels are endlessly adaptable and always a crowd-pleaser. This version takes things a step further with a dramatic presentation and a sweetness that balances tradition with the unexpected.

This dish also reminds me of my Carrot Ring, another family recipe that is beautiful and holiday-worthy. The bundt pan mold gives this recipe a centerpiece feel. You get the comfort of sweet noodles and caramelized walnuts in every bite.

Ingredient Notes
- Dark Brown Sugar - I use dark brown sugar as opposed to light brown sugar. Dark brown sugar has a molasses taste and when baked is stickier.
- Walnuts - You can use pecans as well as walnuts. Walnuts add a savory note and help to take some of the sweetness level down a notch.
See the recipe card for quantities.
Additions & Substitutions
Additions:
- Spices - While the cinnamon is enough in this recipe, I have also added some nutmeg and cardmom to warm up the spices depending on the time of year.
- Pineapple - My cousin adds pineapple to this recipe. While it is delicious, it is not something I like to do.
Substitutions:
- Gluten-Free - If you want to make this gluten-free, use a gluten-free egg noodle in place of the noodles in the recipe. It doesn't change the taste and is delicious either way.
- Sour Cream - You can make this recipe with a non-dairy sour cream to make this recipe pareve or dairy-free.
How To Make A Sweet Bundt Pan Noodle Kugel: Step-By-Step
Here are some quick visual instructions. Remember that full instructions with the exact ingredients are in the printable recipe card:

Step 1: Preheat the oven and spray the bundt pan. Place the melted butter, then the brown sugar, and followed by the walnuts into the pan.

Step 2: In a large mixing bowl, combine the salt, eggs, cinnamon, sugar, raisins, sour cream, applesauce, and the rest of the butter.

Step 3: Add the noodles and combine thoroughly.

Step 4: Place in the bundt pan and bake. Take out of the oven and let sit for 10 minutes. Flip upside down out of the pan onto a plate and serve.
Recipe Tips
- Slice with care - A serrated knife works best for cutting through the caramelized walnut topping without crumbling the kugel.
- Cool before flipping - Let the kugel rest for about 10 minutes after baking. This helps the caramelized topping set and keeps the kugel from falling apart.
Confidence Tip
Generously grease the bundt pan with non-stick cooking spray or butter so that when you flip this recipe over to serve, the noodle kugel doesn't stick.

Frequently Asked Questions

Yes. Reduce the sugar in the noodles to ¼ cup but keep the brown sugar topping that works as the caramelization.
