Substitutions and Variations For This Lentil Potato Soup Recipe
Like any soup recipe, this sausage and sweet potato one can be varied to suit your taste preferences. Below are some fun additions and swaps you can try.
- Spice: if you love a spicy soup, add some sliced jalapenos, chipotle peppers, red pepper flakes, or cayenne pepper.
- Vegetables: though this soup is brimming with nutrients, you can add in vegetables like carrots or celery or whatever you have on hand.
- Sausage: any sausage will work for this soup so play around with whichever one you have on hand or leave it out to go vegetarian. Using a smoked sausage will give the soup a smokey taste.
- Broth: you can use chicken broth, beef broth, or vegetable broth. Each one will vary the taste slightly but still give the soup a warm, comforting feel. I prefer using a bone broth but if you don't have that on hand, you can use 8 cups of water and add a dry stock like Cooks Delight.
- Lentils: You can use any type of lentil from red lentils, green lentils, brown lentils, black lentils, or even French lentils. If you don't have lentils on hand, you can substitute the lentils with beans of your choice. Just make sure to rinse them and know you may not need to simmer the soup as long.
- Seasonings: the soup recipe is seasoned very minimally but has a depth of flavor from the smoky sausage. Adding in some ground cumin, curry powder, cilantro or anything else in your spice cupboard is an easy way to change it up. Or, add some fresh herbs like fresh rosemary or fresh bay leaf to give the soup another flavor.
- Sweet Potato: You can swap the sweet potato for yukon gold potatoes or any other variety as long as they are cubed potatoes.
How To Make Potato Lentil Soup: Step-By-Step
In a large pot, heat the olive oil over medium-high heat and sauté the onions until they’re soft, and then add in the garlic.
Add in the sweet potato and sauté for another two minutes.
Mix in the lentils, sausages, spinach, bay leaves, and broth.
Bring the soup to a boil before stirring in the dry lentils and then let it simmer, covered, for 40 minutes until they’re cooked.
Season with salt and pepper and serve.
Expert Tip
The soup thickens up from the lentils absorbing the broth. This is especially true after it’s been stored. To thin it out, just add more broth.
You want the lentils to only be cooked al dente when you remove the pot from the heat. This is because they’ll continue to cook afterward, and you want to maintain some texture to them.
Storage
- Store: Allow the soup to cool fully before you store it. If storing it in the fridge, place it in a glass, sealed airtight container. It will stay fresh for 4-5 days.
- Freeze: You can also freeze this soup in a freezer-safe container or bag for up to 3 months. Let it thaw in the fridge when you’re ready for it.
- Reheat: To reheat the soup, you’ll need to add a splash of some more broth or water before heating it over medium to low heat on the stove until warmed through.
Recipe Frequently Asked Questions
It’s always a good idea to rinse lentils briefly before using them. Sometimes you’ll find some debris mixed in with them like rocks and rinsing helps you avoid eating it. Just rinse them briefly through a fine mesh sieve and pick out anything that doesn’t fit.
Lentil soup will thicken up the longer that you cook it as the lentils keep absorbing liquid. You may need to cook the soup longer or adjust the lentil-to-liquid ratio if you prefer a thicker soup.
