A comforting, easy-to-make dinner recipe. This lentil soup with sweet potatoes and sausage is loaded with wholesome nutrition that will help warm you up on a cool day.
Saute onions in the oil until wilted. Add the garlic and saute for another minute.
Add the potato and saute for another 2 minutes.
Add the lentils, sausage, spinach, broth, and bay leaves.
Bring to a boil then simmer for 40 minutes covered.
S & P to taste. Serve.
Notes
Store in the refrigerator in an airtight container for up 4 days. The soup can be frozen and reheated. When reheating you may need to add a touch more broth to get to the right consistency. This soup is delicious without the sausage and makes for a full meal paired with a side salad.
