I don't know about you, but I really don't want summer to come to an end. While technically it isn't over until September 21st, the kids around us are gearing up to start school again so it feels like summer is over.
What's Happening
This past week was a blur of activity but nothing really "huge" was happening in our home. Hubby has been in Omaha for the past few days attending the Nationals for a sport he is helping to evolve. He sits on the board of directors for USA Boccia.
USA Boccia is an internationally known sport for the disabled. The sport has been played in the Para-Olympics. While most of you know the sport Bocce Ball, this sport is similar except that all of the players are sitting down and most are in wheelchairs. He loves knowing he is playing a small part in shaping this sport.
I think I forgot to mention that we went to a terrific play when we were in NYC last week. We took our kids to see Hell's Kitchen on Broadway. It was all about the life and times of Alicia Keyes and it included her music. We loved it and I highly recommend seeing it if you are headed to NY.
We finalized plans for one of the bathrooms we are gutting. I had hoped to finish off the other two but our designer came down with Covid so we didn't get a chance to get together. I will share more as the project moves along!
Links And Products I Am Loving
- Those closest to our family know that I only eat grass-fed, grass-finished meat and poultry. I found a new farm near us that will also ship. Wanda Farms
- Of course I also use Butcher Box for much of what we eat along with buying from the Wild Fork store near us. Butcher Box
- While I love my morning latte, I never loved black coffee. Maybe I should try salting my coffee to take the bitterness out? Would you try this?
- These 8 European cities will pay you to move there. Really????? Hmm..
- Who would have thunk, lol...All this time and I never knew.

Recipes
I spent two days recipe-testing four ideas for some upcoming posts. I can't wait to share them with you soon!
This recipe is new on the blog and it is really delicious this time of year. We love fresh tomatoes and there is nothing better than pairing them with burrata! I've added a couple of other wonderful summer recipes for you to enjoy this week.

Hi Gwen,
We tried the salt in the coffee and I didn't love it. Although I do love black coffee so maybe that's why, LOL ! My grandfather used to do it, so it is a time-tested technique!
