Have you ever had kalettes? Kalettes are baby kale picked before the leaves become large.
They are so delicious and I find them at one vendor from our farmer's market. Typically I trim the ends and then roast them, with olive oil and salt, in a 425 degree oven.
What's Happening
We are back home and in the middle of construction. Yay and nay. It's a total mess in our home and I can't underscore that enough.
While we were gone they almost completed the hall bathroom, formally known as the boy's bathroom. Pictures will come once it is totally complete.
This week we moved 95% of everything out of the primary bedroom. Don't ask where it moved to. We have clothes and "things" in every room of the house!
We used luggage and bags for anything loose, like extra shoes, and ended up closing off the living room with all of it so the dogs can't go in there. Today we are moving all of the essentials from the primary bath into the hall bath and sleeping in one of the boys bedrooms tonight.
Tomorrow will start the demolition of the primary bedroom. They are moving a closet door and expanding the bath as well as taking out some built-in cabinets and a built-in bed that has been there for 45 years!
I wish I could say that I was able to work this week, but I am sorry to say that I could not with everything happening in the house. I did recipe test one meal but it needs to be re-done and re-tested again for dinner tonight. I am hoping to be able to work this coming week at the library, coffee shop, or in our basement!
These are Japanese sweet potatoes. Have you ever tried them? If so I would love to know!
I love these sweet potatoes and look forward to them every year. One farmer at the market carries them or sometimes, in the fall, I will see them at Trader Joe's.
While you can do anything with them that you would a standard sweet potato, I have the best recipe for you!
Rub the outside of the potato with olive oil. Sprinkle the outside with Kosher salt. Fully package them in aluminum foil. Throw them on the grill on indirect heat for 1.5 hours. You will thank me when you eat them!
The outside will be crusty and salty. The inside will be luscious and roasted!
