We are back in Chicago this week and we returned to some extremely cold weather! It was difficult to go from temps in the 70's to temps that were hovering around 0.
What's Happening
While the snow that we have on the ground is beautiful, I am missing walking two miles every morning either along the ocean watching the whales jump or to a favorite local coffee shop. I am also missing watching the gorgeous sunrise and sunset daily over the ocean.
I am also missing seeing the turtles on the shore and my favorite drink when I went to the pool. I have a frozen concoction of coconut water, pineapple juice and pureed strawberries. It's a skinny version of a Lava Flow and let me tell you, it is super yummy. I could add rum but I chose not to do so.
This week has been a catch-up week. Bills, grocery shopping, lots of computer work, filming new recipes, and so much more. I'm not sure Hubby left his desk either. He mentors entrepreneurs and he had at least 6 hours, most back-to-back, of on-screen Zoom time.
One interesting thing did happen, however. Last week, a gentleman reached out asking about my Mom's family. My Mom grew up in Elkhart, Indiana, and this person was doing some local genealogy. He had some of the information correct, but not all. I ended up on a Zoom with my cousin, and this man, talking about my Mom and her extended family.
This is the week of birthdays and anniversaries in our house. My daughter-in-law kicks it off on the 19th, my niece on the 22nd, my twins today, on the 23rd, and my son's anniversary on the 25th. Whew.....Do you have weeks like that in your house?

- Whelp, you know how I feel about chocolate, right? I'm a huge fan after having spent 10 years in the chocolate business. This article says that chocolate may help fight diabetes.
- This government article shows that dark chocolate may also help with endurance.
- Moving on. Have any of you read the new Mel Robbins book "Let Them"? I am trying to decide if I want to read this. Instead, I am reading a quick James Patterson book. I am really into the Alex Cross series, among others. I was also told to read Happier Hour about how to beat distraction. Hmmmm.
- I worry about seed oils. I don't use seed oils in our house because I read that they cause inflammation. I took them out of the house a few years ago and I did notice a difference. I only use avocado oil, coconut oil, and olive oil in our house. Here is an interesting article about seed oils.
- When I am either in Hawaii or Colorado (yay to heading there soon), I like making my own latte in the mornings. I use a relatively cheap (and the only ones I could find) espresso maker, an Aerolatte frother, Kauai Roastery Pakala coffee, Macadamia Milk, and Hazelnut Nutpods. I sometimes also throw in the Half & Half by Nutpods (which is really good!)
