What's happening
I am still under the weather but my doctor insures me that this persistent cough and drip will go away in another couple of weeks. Ugh.
The farmer's markets have started around us. I picked up some garlic scapes and strawberries but I am on the lookout for ramps.
My neighbor, who has a place in Northern Wisconsin, said he would bring me wild ramps next week from the acreage next to his house! Over the next couple of weeks, I will be focusing on salads so greens and herbs are on my checklist.
The local chocolate festival is this weekend!
The new recipe this week is an egg souffle roll that has a spinach, mushroom, and cream cheese filling. I will admit that this recipe is not the easiest to prepare; however, it makes a statement when you have company and can be made the day before.
Trying to make this recipe gluten-free was a recipe fail. I need to work on testing this a few more times before I post the gf version for you but I have been making this non-gf version for 15 or more years so it is a no-fail recipe in my arsenal.

The above picture is my farmers market haul from Saturday. We are having the kids over for dinner tonight so I will be throwing the garlic scapes on the grill along with making my grilled portobello mushrooms, making a salad with the arugula and the asparagus, and serving the rosemary garlic bread we picked up. What should we make for dessert?
By the way, the strawberries are fantastic. They are a variety known as Early Glow and the taste is just incredible.
The picture below is my grand dog who we will be playing with all day today. He's an energizer bunny with the batteries removed. He doesn't stop and loves to be held and cuddled. (Ignore the double chin bad picture of me, lol)
