We rescued a new dog! His name is Walt.
What's Happening
This week went by super fast. I'm still trying to catch up from the vacation and get back into work, which frankly isn't easy.
Speaking of work, I needed to put it on the back burner for the last half of this week. I will be behind in posting new recipes next week, sorry but not sorry. Why? We had to travel to pick up our new dog!
Yes, we did a "thing". Tibetan Terrier Rescue Org called me in March and asked me if I would like to be gifted with Walt. I couldn't refuse, as it's a perfect situation for our family.
He started life as a show dog for one of the top breeders in Illinois. He spent over three years in the ring, and then the breeder determined she wanted to use him as a stud dog for her breeding program. Unfortunately, he was found to be sterile.
She gave Walt to the brother of one of her employees, who was tragically killed in a car accident last December. The family returned the dog to the breeder, and here we are!
We brought him home on Friday, and Poppy has been spending the weekend getting to know him. As rescuers of dogs, my hubby and I know that it is a progression of 3 days, 3 weeks, 3 months, and then finally 18 months before the dog is fully integrated and loving life in your home. Given that we are in the first 3-day period, it is a lot of work!
Walt is about the same age as Poppy. We are super excited and can't wait to see how he progresses with a lot of love and training.
If you are wondering about the name, his full name is Barnstorm Kimik I'm Going To Disney by Dzine, but he goes by the name "Walt" (after Walt Disney), given to him by his handler when he was a puppy.
I also started planting my flowers, herbs, and vegetables this week! The tomatoes are in their pots and the rest are awaiting for my attention later today. Spring is my favorite season. I love the burst of colors and all of the green. The farmer's market opened last week so we will be hopping on that train starting next weekend!

- I just bought these pillows to use with my new bedding. They are really sturdy!
- Speaking of bedding. Do you know how often you should wash your sheets? This may surprise you.
- We traveled to Champaign, Illinois to pick up Walt. Hubby had a good time re-visiting his alma mater. It is graduation weekend and we saw so many kids who had these moving cubes. I was so surprised! Not like the old days that's for sure.

Recipes
I have a few new recipes for you this week! I love using chickpeas and have been playing around with them in a few recipes.
This Chickpea salad uses roasted carrots that are spiced, adding a depth of flavor. The salad is topped with a Pomegranate-Tahini dressing. It's delicious!
My go-to tahini sauce that I love to put on almost anything that is roasted.

Aww Walt is a cutie! I hope he fits in well with your family. We adopted our third dog in January and it has been an adventure in chaos for those first 3 months for sure. He was a street dog so did not have any house manners but slowly but surely doing much better. My only mistake was misjudging his energy level in comparison with our older girls. Dogs are so special and the extra work is so worth it!

Thanks Deb! We have had two dogs for the last 20 years or so. 4 Tibetan Terries and one Schnoodle (I took my Aunt's dog when she passed). The last three TT's have all been rescues.
