We are out in Colorado enjoying the mountains. The kids are having a blast skiing.
What's Happening
We have been out in Colorado all week. The weather has been outstanding. It has been sunny and warm. Perfect for spring skiing.
The kids, along with Steph's sister, have been on the slopes almost every day. They spent one day snowmobiling and had a lot of fun as well. We stopped skiing a few years ago in order to preserve our bodies. We do enjoy snowshoeing but opted not to go this year.
We are happily enjoying the warm weather, firepits, sunny skies, mountain air, beautiful landscapes, friendly people, and delicious food. My daughter-in-law can't stop talking about the cookies and ice cream sandwiches she is having at the end of a ski day, lol.
We celebrated my birthday last Sunday by having a few nice meals and flowers that both hubby and our kids arranged. It was a quiet but enjoyable week spent with the kids.
We came home yesterday and I am right back at work. For the next three weeks, I have many recipes to develop, Passover to celebrate and cook for, and we get ready for our next trip at the end of April.
