What's Happening
Hanukkah starts tonight. When the kids were small, we would go all out and decorate the house with blue and white streamers, light-up dreidels, and other decorations. Now that the kids are no longer living with us we quietly light the candles each night and say the blessings.
I have never made sufganiyot, traditional jelly doughnuts. It is on my list to try this year but we have so many Jewish bakeries near us that it never made a lot of sense to me. We make latkes, basically potato pancakes, to celebrate and this year will be the same.
Our Chicago kids will join us next weekend for Hanukkah and it will be fun. I will tell you about that next week.
I would like to share my latke recipe. This recipe is only for my email subscribers and is not on the blog. It's slightly different than other recipes you will find but equally, or better, in my opinion, than most.
Potato Latkes
- 2 scallions, minced
- 4 cloves of garlic, minced
- 1 large egg
- 2 tablespoons of flour (I have used a GF 1:1 flour)
- 2 medium Russet potatoes, peeled
- canola, avocado, or other oil (enough to cover the pan to a depth of â…› inch)
- salt and pepper to taste
Combine the scallions, garlic, flour, and egg in a large mixing bowl. Grate the potatoes. Using a cotton towel, drain the potatoes well getting most of the water out. Save the potato water. Add the potatoes to the mixing bowl. Season with salt and pepper. Add a little of the potato water (starch) to help bind the latkes. Heat the oil in a large cast iron skillet or saute pan. When the oil is hot, fry small amounts of the potato mixture (pushing them into a flat circular shape) until they are crisp on both sides. Remove to a paper towel and keep them warm on a sheet pan in a 200 degree oven until you are finished or ready to serve.
