Ingredients

cherry or grape tomatoes

shallot
quartered or thinly sliced

cloves of garlic
smashed
½
cup
extra-virgin olive oil
divided

extra-virgin olive oil
Kosher salt
crushed red pepper flakes
pinch

feta
block

sprigs of fresh thyme
Instructions
Preheat the oven to 400℉.
In a medium bowl, combine the tomatoes, shallots, and garlic.
Drizzle a ½ cup of the olive oil over the tomatoes.
Season with salt, pepper, and red pepper flakes and toss to combine.
Place the feta in the center of a medium baking dish.
Pour the tomato mixture around the feta cheese.
Scatter the thyme sprigs around the tomatoes.
Drizzle with 1 tablespoon of olive oil.
Bake until the tomatoes are bursting and the feta cheese is golden, around 40 minutes.
Serve warm.
Notes
Serve this dip warm. It can be made ahead and reheated in a 250℉ oven for 30 minutes.
Store in the refrigerator for up to 4 days.
Do not freeze.
