Use this Passover granola as a delicious snack or easy breakfast! This granola recipe has a buttery, cinnamon flavor that brings you all the comfort without any grains!
Line a rimmed baking sheet with parchment or spray with a cooking spray.
Melt the butter, oil, brown sugar, and water either on the stove or in the microwave in a microwave-safe bowl.
In a large bowl, combine the gluten-free matzo farfel with the nuts, raisins, dates, coconut, and cinnamon.
Pour the butter mixture over the matzo and mix until well combined.
Pour the mixture onto the prepared baking sheet and spread it out.
Bake for 25 minutes. Stirring occasionally and watching it so it doesn't burn.
Store in an airtight container on the counter.

Let the Passover granola cool fully before storing it. When it’s ready, place it in an airtight container. On the counter, granola will last 5-7 days.Refrigerator - You can also store this granola recipe in the refrigerator where it lasts up to a month. However, it will harden up so it is not fully recommended.Freeze - Do not freeze.Make sure you line your cookie sheet with either parchment paper or a silpat mat.The amounts for the raisins and dates are just a recommendation.
