Recipe for Jewish Kugel: Not Too Sweet, No Raisins
A classic Jewish noodle kugel made with cottage cheese, cream cheese, and sour cream, baked until the top turns golden. It's lightly sweet with no raisins, easy to make a day ahead, and a good fit for Rosh Hashanah, Shabbat, or any dairy meal. Gluten-free egg noodles work here too if you need that swap.
Cook the noodles according to the package instructions. Drain and set aside.
1 lb broad egg noodles
In a large bowl, or food processor, combine the cottage cheese, sour cream, cream cheese, eggs, butter, sugar, and salt.
16 oz cottage cheese, 16 oz sour cream, 6 large eggs, ½ cup sugar, 8 tbsps butter, 8 ozs cream cheese, pinch salt
Add the cooked noodles to the cheese mixture.
Place the mixture in the prepared casserole dish.
Bake for 1 ½ hours or until the cheese has set and the top is golden. Serve.
Notes
Store covered in the refrigerator for 3 to 4 days.Freeze the baked kugel for up to 2 months and thaw overnight in the refrigerator before reheating.Reheat covered in a low oven so the top does not dry out.Assemble the kugel a day ahead and bake it the day you plan to serve it.Use full fat cottage cheese sour cream and cream cheese for the richest texture.Undercook the noodles slightly since they finish cooking in the oven.Skip the raisins if you want the kugel to stay on the milder side.
