Bottled juice will flatten the taste and you need the zest to brighten the sauce.If the tahini seizes or clumps when the lemon juice is added, keep whisking and add water a tablespoon at a time until it smooths back out. This is normal, not a sign anything went wrong.Store in an airtight container in the refrigerator for up to 5 days. Stir well before using, since the sauce may thicken slightly as it sits.Use this sauce as a dressing for salads, a drizzle for roasted vegetables like Roasted Eggplant or Roasted Green Beans or a dip for pita bread and falafel.
