This Hearts of Palm Salad is a light, refreshing side dish made with avocado, cherry tomatoes, sweet onion, parsley, and a bright lime dressing. It comes together in minutes and works beautifully as an easy lunch, summer salad, or simple Mediterranean-inspired side.
Add the tomatoes, hearts of palm, onion, and avocado to a bowl.
Make the dressing by whisking all of the ingredients together.
Add to the vegetables and combine.

Add canned tuna to make this a meal. This salad is best enjoyed freshly made due to the avocado. However, the lime juice will help keep the avocado from browning. If you have leftovers already dressed, store them in an airtight container in the fridge for up to 3 days.If you want to make this salad in advance, combine the salad ingredients together except the avocado. Whisk together the dressing and store both separately. When you need it, add some fresh avocado and drizzle the dressing over top.
