Gluten Free Pasta Salad With Artichokes and Herbs (Italian)
Easy to make and a summertime classic, this gluten-free Italian pasta salad is made with a zesty, homemade dressing tossed with juicy vegetables and savory salami. The perfect recipe for a light lunch, side dish, or potluck!
Bring a pot of water to a boil on the stove and add some kosher salt.
Make the dressing by whisking all of the ingredients together, except the salt and pepper. Season with salt and pepper to taste. Set aside.
Cook the pasta according the package instructions. Drain and add to a large mixing bowl.
Add the veggies and herbs to the pasta and toss together.
Dress the salad by pouring the dressing over the pasta and tossing to coat. Serve.
Notes
While this salad is delicious served immediately, if you let the salad sit for over 30 minutes the dressing will meld into the pasta and veggies giving a more robust flavor. Store the salad in an airtight container in the refrigerator. The salad should last for 2-3 days or more. I love to change up the cheese in this recipe and I love to add in some lemon zest or lemon juice to the dressing.
