Authentic Greek Salad
This is an authentic Greek Salad based on our travels to Greece where we discovered that Greek Salads do not include lettuce!

- 2 large tomatoes chopped
- ½ seedless cucumber or 2 mini cucumbers chopped, skin on
- ½ sweet onion chopped
- pitted greek olives are optional
- 4 oz feta cheese crumbled
Dressing
- ½ cup olive oil
- ¼ cup white wine vinegar
- 2 sprigs of dill chopped or 1 t dried dill
- S & P to taste
Chop all of the vegetables and add them to a bowl.
Add the feta to the bowl and combine.
Make the dressing by combining the oil, vinegar, dill, and salt and pepper.
Add the dressing to the vegetables and stir.
This is a delicious side dish on it's own, or add some canned tuna to make this a meal!
This salad can be made up to a few hours in advance.
