Authentic Greek Salad

This is an authentic Greek Salad based on our travels to Greece where we discovered that Greek Salads do not include lettuce!

Ingredients

  • 2 large tomatoes chopped
  • ½ seedless cucumber or 2 mini cucumbers chopped, skin on
  • ½ sweet onion chopped
  • pitted greek olives are optional
  • 4 oz feta cheese crumbled

Dressing

  • ½ cup olive oil
  • ¼ cup white wine vinegar
  • 2 sprigs of dill chopped or 1 t dried dill
  • S & P to taste

Instructions

  • Chop all of the vegetables and add them to a bowl.
  • Add the feta to the bowl and combine.
  • Make the dressing by combining the oil, vinegar, dill, and salt and pepper.
  • Add the dressing to the vegetables and stir.

Notes

This is a delicious side dish on it's own, or add some canned tuna to make this a meal! 
This salad can be made up to a few hours in advance.
