Hearts of Palm and Avocado Salad

This Hearts of Palm and Avocado Salad is easily enjoyed at lunch or dinner. It is healthy and delicious with notes of lime. You can also add some canned tuna to make this a meal.

Ingredients

  • ½ cup cherry tomatoes
  • ¼ whole small sweet onion cut into thin slivers
  • 1 14 oz can of hearts of palm drained, and sliced into ½" thick slices
  • ½ whole avocado cut into ½" peices

Dressing:

  • cup flat leaf parsley coarsley chopped
  • ¼ t lime zest grated find
  • 1 tablespoon lime juice
  • 1 tablespoon mayonnaise
  • 1 tablespoon olive oil
  • S&P to taste

Instructions

  • In a bowl, toss the tomatoes with the onion, hearts of palm, and the avocado. In a small bowl, whisk the dressing together and toss with the vegetables.

Notes

Add canned tuna to make this a meal. It keeps in the refrigerator for up to 3 days.
