Lentil Soup with Sweet Potatoes, Spinach, and Sausage

This is an easy and healthy soup that is loaded with fiber and vegetables. Feel free to omit the sausage, use a spicy sausage, or change the spinach to kale. It's your choice. Add extra broth if you find that the lentils absorb all of the liquid. The lentils should be al dente when done as they will continue to cook after you take it off the heat. I have used a vegetable broth in this recipe but it is just as good with either a chicken or beef broth.

Equipment

  • 1 Large Soup Pot

Ingredients

  • 1 lb lentils
  • 1 onion chopped
  • 2 tablespoon olive oil
  • 2 cloves garlic chopped
  • 1 sweet potato peeled and chopped
  • 2 cup baby spinach
  • 13 oz turkey smoked sausage sliced
  • 8 cup vegetable broth
  • 2 bay leaves
  • S & P to taste

Instructions

  • Saute onions in the oil until wilted. Add the garlic and saute for another minute.
  • Add the potato and saute for another 2 minutes.
  • Add the sausage, spinach, broth, and bay leaves.
  • Bring to a boil then simmer for 40 minutes covered.
  • S & P to taste. Serve.

Notes

Add more broth if the lentil absorb the liquid.
