Heat the oven to 400 degrees Fahrenheit. In a large bowl, combine the onion, tomatoes, rice wine vinegar, olive oil, cheese, and a pinch of salt. Set aside.

Chop the cauliflower head into florets and place them into a bowl. Add olive oil and salt to the bowl. Place the florets in a single layer on a foil-lined sheet pan.


Roast until the cauliflower has golden edges and is caramelized about 30 minutes.


When the cauliflower is done, set it aside to cool for 10 minutes. Add to the onion mixture and toss. Garnish with arugula and Marcona almonds.
