Gluten Free Slow Cooker  Pot Roast

Lightly seasoned beef cooked until juicy in a dry wine gravy and served with mashed potatoes or a salad. This Gluten Free Slow Cooker Pot Roast is a delicious Sunday night dinner or weeknight meal.

Ingredients:

Chuck roast Onion Sundried tomatoes Red wine Beef broth Carrots Garlic Bay leaves Red pepper

Sprinkle the roast with salt and pepper. Coat the skillet with olive oil and sear the roast on all sides. Place the roast into the slow cooker.

Re-coat the skillet. Saute the onions scrapping up all the browned bits. Add the next 6 ingredients and simmer for 5-10 minutes to combine. Place into the slow cooker.

Add the vegetables to the slow cooker.

Set your crockpot to either 8 hours on low or 2 hours on high then switch it to 4 hours on low. Shred the beef when finished.
