The first time I ate a Starbucks egg bite I was in heaven. Typically, I grab them with my morning coffee when we are traveling and I want a high-protein easy grab-and-go breakfast.
The Starbucks egg bites are tasty and convenient, but I knew they most likely contained ingredients I wouldn't typically eat at home. I set out to make an egg bite in my kitchen that I could keep in the freezer and grab when I wanted a quick bite with my coffee.

While most of the time you won't have leftover egg bites, these are easily made ahead and stored until you need them. These homemade egg bites fit into a low-carb diet or a keto diet.

There are many ways to switch up the taste of these egg bites, including my recipe for bacon and gruyere egg bites.
Additions:
- Spices - Add some red pepper flakes or even a dash of Tabasco sauce to spice up the egg bites. You could also add garlic powder, chili powder, or dried herbs.
- Green Onions - Add some chopped green onions for a slight crunch and an onion flavor.
- Green Peppers or Red Bell Peppers - If you like bell peppers, adding either green or red bell peppers will give the egg bites another flavor.
- Spinach - Use spinach along with some mozzarella cheese for a delightful bite.
- Mushrooms - Saute some mushrooms and add in some garlic combining them with parmesan cheese for another flavor combo.
- Protein - Crumbled bacon, Canadian bacon, or sausage would all work well in this recipe.
Substitutions:
- Cheese - You can substitute gruyere cheese, swiss cheese, or mozzarella cheese for the cheddar cheese in this recipe.
- Cottage Cheese - Substitute ricotta cheese or even Greek yogurt for the cottage cheese. I prefer a full-fat cottage cheese and use either Kalona or Good Culture 4% Cottage Cheese.

How To Make Healthy Starbucks Egg Bites Recipe: Step-By-Step:

Step 1: Spray a mini muffin pan with a cooking spray or coat with olive oil and preheat the oven to 350 degrees. Place all of the ingredients except the chives into a blender or Nutribullet.
Step 2: Blend the eggs, cottage cheese, cheddar cheese, salt, and pepper.
Step 3: Divide the egg mixture into the prepared pan filling the cups no more than ¾ of the way to the top. Sprinkle with chives.
Step 4: Bake for 20 minutes or until the eggs are slightly firm to the touch. Let them sit for a few minutes before removing them from the pan.

- Store - Store in the refrigerator in an airtight container for up to 5 days.
- Freeze - You can freeze these by putting them into an airtight container or freezer bag. Store these for up to 2 months. Defrost in the refrigerator overnight.
- Reheat - You can easily reheat these egg bites by putting them in the microwave on a defrost setting or if defrosted, you can reheat them at1 5-second intervals.
Equipment
These egg bites work best in a silicone muffin pan. While the one I have at home is not sturdy, it bends all over the place, I do like this one on Amazon as it will be simple to take in and out of the oven. If you already own a silicone muffin tin that isn't sturdy, you can use a wire rack or baking sheet underneath it while it is cooking in the oven.

- Spray the cups of a mini muffin pan lightly with a cooking spray or olive oil.
- Preheat the oven to 350℉.
- In a blender or Nutribullet, blend together the eggs, cottage cheese, cheddar cheese, hot sauce, salt, and pepper.
- Divide the egg mixture into 12 cups of your muffin pan filling the cup no more than ¾ of the way.
- Top with the chopped chives.
- Bake for 20 minutes until the eggs are slightly firm to the touch.
- Remove from the oven and let sit for a few minutes. The egg bites will settle down in the pan.
- Remove from the pan and enjoy or store for later.
