What Is a Blintz Souffle Or Blintz Casserole
A blintz souffle is a classic Ashkenazi-Jewish-American comfort food. It combines the flavors and elements of a traditional blintz casserole with the airy texture of an egg souffle. Blintzes are found in Eastern Europe and they are crepes that are typically filled with cheese or fruit and then folded and baked or fried.
Typically, in a blintz souffle, the blintzes are layered in a baking dish and then an egg mixture is poured over them.

In this version, I do not use pre-made frozen blintzes and I have made the recipe gluten-free. I like to call this a deconstructed blintz souffle.
This dish is often served for Yom Kippur (break the fast), high holidays, or brunch on a special occasion during the year, as well as being a popular dish on other Jewish holidays. It is one of many popular recipes and part of essential Jewish cooking as well as a great recipe to serve when guests are coming.

You can use a gluten-free flour blend. Just choose one without xanthan gum in the mix. I like to use King Arthur Gluten Free Multipurpose Flour.
Additions & Substitutions
Though this blintz recipe is simple, they are also easy to vary if you want to switch it up.
Additions:
- Fruit - the easiest way to vary this breakfast souffle is either putting some fruit jam on top of the cheese mixture before you pour the last layer onto the souffle or serving jam on the side. Since it is a sweet dish, serving it with peach jam, blueberry pie filling, or just sliced fresh fruit is delicious, and a great flavor switch up every time!
- Cinnamon - sprinkle cinnamon on top of this casserole for a warming flavor.
- Lemon or Orange - if you would like to add a bit more kick, add about 2 tablespoons of lemon zest or orange zest to either the batter or the filling.
- Sour Cream - serve this with a dollop of sour cream on the side to cut the sweetness.
Substitutions
- Frozen Blintzes - if you want to serve these as a traditional blintz souffle, use frozen store-bought blintzes. These are normally cheese-filled and with them, you only need to make the topping, pour it over, and bake.
- Cheese - while this recipe calls for cottage cheese, I have also used farmer's cheese or ricotta cheese to make the sweet cheese filling.
- Dairy - if you would like to stay dairy-free, you can replace any of the dairy products with a non-dairy alternative.
How To Make This Blintz Casserole: Step-By-Step
Here are some quick visual instructions. Remember that full instructions with the exact ingredients are in the printable recipe card:
Step 1: Preheat the oven to 350 degrees. Grease a 9x13 baking pan with nonstick cooking spray or butter.
Batter: In a blender, or food processor fitted with a steel blade, or using an electric mixer in a large bowl, add the butter, sugar, eggs, sour cream, orange juice, flour, and baking powder. Blend until smooth.
Step 2: Filling: In another bowl, combine the cream cheese, cottage cheese, vanilla, egg yolks, and sugar.
Step 3: Pour in half of the batter from Step 1 to create a bottom layer. Slowly drop the filling mixture from Step 2 onto the batter.
Step 4: Pour the rest of the batter over top of the mixture and bake in the oven for 50-60 minutes until puffed and golden brown.
Let cool for 5-10 minutes before serving it.
Recipe Tips
- Butter - make sure the butter you use is softened so that it blends well into the mixture.
- Baking - keep an eye on the casserole towards the end of the baking time. The top should be a beautiful golden brown color.
Confidence Tip
This can be made the day before, stored in the refrigerator, and then baked the day you need it. Or, you can store the ready-to-make casserole in the freezer for up to a week and then defrost it before baking it. If you want to bake it ahead you can bake it and then store it in either the refrigerator or the freezer.
Storage And Reheating
- Storage - the blintz souffle can be stored in the refrigerator once fully cooked and cooled. Simply cover the baking dish with aluminum foil or plastic wrap and it will stay fresh for up to 3 days in the refrigerator.
- Reheating - to reheat it, heat the souffle at 300℉ until warmed through.
- Freezing - To freeze the casserole, you’ll want to transfer it to a freezer-safe container. It can stay in the freezer for up to 2 months once fully cooked or up to a week uncooked. To enjoy it, let it thaw in the fridge overnight and then reheat it slowly at a low oven temperature.

You can add any fruit or fruit jam, sour cream, or cinnamon as a side to the souffle. Typically, I will also be serving other egg dishes for brunch like my Smoked Salmon Frittata, my challah french toast casserole, and proteins to round out the brunch.
Blintzes always contain a filling, typically a sweet cheese, before they’re baked or fried whereas crepes can be made without a filling. Likewise, crepes are light, thin, and often only cooked once.
Yes! Let it cool in the dish it was cooked in before covering the dish with aluminum foil or plastic wrap and placing it in the refrigerator. When you’re ready, bring the dish to room temperature before baking it at 300℉ until cooked through. You can also store the souffle in individual portions to reheat quickly.

Filling
- 8 oz cream cheese cut up or softened
- 1 pint cottage cheese
- 1 teaspoon vanilla extract
- 2 egg yolks
- 1 tablespoon sugar
Instructions
Egg Mixture
- Preheat the oven to 350℉.
- Prepare a 9x13 pan by spraying it with nonstick cooking spray or coating it with butter.
- In a blender, food processor, electric mixer, or by hand, combine the butter, sugar, eggs, sour cream, orange juice, flour, and baking powder.
- Pour ½ of the mixture into the prepared pan.
Filling
- Combine the filling ingredients in a large bowl.
- Spoon the filling by heaping tablespoons over the batter.
