A blintz casserole (also known as a blintz soufflé) is a baked dish inspired by classic Eastern European blintzes, which are thin crepes traditionally filled with sweet cheese or fruit.
Instead of using pre-made or frozen blintzes, this recipe takes a deconstructed approach, layering a simple batter with a creamy cheese filling. It captures all the flavor and comfort of the original, without the extra work.

You can use any gluten-free flour blend that is a multi-purpose blend. I have tested using King Arthur Gluten Free Multipurpose Flour and this recipe came out great.

Additions & Substitutions
Though this blintz recipe is simple, they are also easy to vary if you want to switch it up.
Additions:
- Fruit - the easiest way to vary this breakfast souffle is by adding fruit jam on top of the cheese mixture before you pour the last layer onto the souffle. Try peach jam, blueberry pie filling, or just sliced fresh fruit.
- Cinnamon - sprinkle cinnamon on top of this casserole for a warm flavor.
- Lemon or Orange - if you would like to add a bit more kick, add about 2 tablespoons of lemon zest or orange zest to either the batter or the filling.
Substitutions
- Frozen Blintzes - if you want to serve these as a traditional blintz souffle, use frozen store-bought blintzes. These are normally cheese-filled and with them, you only need to make the topping, pour it over, and bake.
- Cheese - while this recipe calls for cottage cheese, I have also used farmer's cheese or ricotta cheese to make the sweet cheese filling.
- Dairy - if you would like to stay dairy-free, you can replace any of the dairy products with a non-dairy alternative.
How To Make This Blintz Casserole: Step-By-Step
Here are some quick visual instructions. Remember that full instructions with the exact ingredients are in the printable recipe card:

Step 1: In a blender, or food processor fitted with a steel blade, or using an electric mixer in a large bowl, add the butter, sugar, eggs, sour cream, orange juice, flour, and baking powder. Blend until smooth.

Step 2: In another bowl, combine the cream cheese, cottage cheese, vanilla, egg yolks, and sugar.

Step 3: Pour in half of the batter from Step 1 to create a bottom layer. Slowly drop the filling mixture from Step 2 onto the batter.

Step 4: Pour the rest of the batter over top of the mixture and bake in the oven for 50-60 minutes until puffed and golden brown.
Let cool for 5-10 minutes before serving it.
Recipe Tips
- Butter - make sure the butter you use is softened so that it blends well into the mixture.
- Baking - keep an eye on the casserole towards the end of the baking time. The top should be a beautiful golden brown color.

This can be made the day before, stored in the refrigerator, and then baked the day you need it. Or, you can store the ready-to-make casserole in the freezer for up to a week and then defrost it before baking it. If you want to bake it ahead you can bake it and then store it in either the refrigerator or the freezer.

When you're ready, bring the dish to room temperature before baking it at 300℉ until cooked through. You can also store the souffle in individual portions to reheat quickly.

- 8 oz cream cheese cut up or softened
- 1 pint cottage cheese
- 1 teaspoon vanilla extract
- 2 egg yolks
- 1 tablespoon sugar
Instructions
Egg Mixture
- Preheat the oven to 350℉.
- Prepare a 9x13 pan by spraying it with nonstick cooking spray or coating it with butter.
- In a blender, food processor, electric mixer, or by hand, combine the butter, sugar, eggs, sour cream, orange juice, flour, and baking powder.
- Pour ½ of the mixture into the prepared pan.
Filling
- Combine the filling ingredients in a large bowl.
- Spoon the filling by heaping tablespoons over the batter.
- Spread lightly.
- Pour the remaining batter over the filling.
- Bake uncovered at 350℉ for 50-60 minutes until puffed and golden.
